''Apples and Pears'', Single Cask, Single Speyside Malt, Vintage 1991

This is the only distillery on Speyside with its own Saladin maltings. The distillers favour American barrels, which makes for a deep golden whisky of subtle character. The first nose is rich and fruity ' tinned apricots, apples and pears in liquor, all covered with double cream. Bottled at 46%.

The distillery stands on the shoulder of Speyside's highest Mountain, from which it takes its name. This is a vatting of two consecutive casks. The nose-feel is quite prickly at natural strength, suppressing the aroma, although we detected dry, high-cocoa chocolate, with a hint of parma violets. Bottled at 46%
